Kathy Kimbrough, RD, LD (she/her)
I believe a healthy diet has more to do with what’s in your head and heart than what’s on your plate. I believe there can be peace with food, peace with your body and that we can find that peace together. I am a Registered Dietitian with an anti-diet, all foods fit, Health At Every Size® approach. I view myself as a team member, a collaborator and a guide to help my clients uncover food beliefs and behaviors that no longer serve them. I love to talk about science, and use that knowledge to separate facts from food myths. It is important to me that you are comfortable and feel safe in the work that we do- all folx are welcome here.
I grew up here in Austin, attending ACC and studying life until my path eventually led me to pursue my degree in nutrition from UT Austin, graduating in 2008. After several years working in the long term care setting, I joined a group nutrition practice where I found a passion for working one on one with those with disordered eating and eating disorders since 2014. I’m a mom, a fur-mom and a wife, an entrepreneur, a part-time gardener, reader, watcher, artist, yogi, conversationalist, avid list maker, lover of paper and pen.
Kathy is not accepting new clients at this time. Kathy works with adults age 18 and up and is in network with BCBS, Cigna and Aetna. She holds both in person and virtual sessions.
Katie Hardson, RD, LD (they/them)
I'm an anti-diet dietitian passionate about whole person health and dismantling the myths of diet culture. With a deep love for nutrition science, I believe that wellness goes beyond the scale.
My journey began at UT Austin, where I graduated and embarked on a career specializing in helping folks navigate disordered eating patterns and eating disorders. My early work involved adolescents and young adults at Dell Children's Medical Group and has expanded to include supporting individuals struggling with hormonal imbalances such as PCOS, thyroid issues, and GI concerns. Additionally, I am skilled at catering to clients with neurodiversity, ensuring everyone has access to compassionate care.
My approach centers around embracing diversity, inclusivity, and understanding. My work has led me to connect deeply with clients from diverse backgrounds and communities, and I genuinely thrive on the rewarding experience of working closely with individuals from all walks of life. I have a commitment to social justice and take pride in assisting gender diverse individuals and the LGBTQ+ community in their nutritional journeys.
Beyond my professional life, I'm a proud parent and devoted partner who cherishes the joy of cooking and savoring delicious food. You'll often find me in the company of my beloved cats, exploring the realms of gaming, or indulging my passions for music, art, and collecting unique coffee cups.
Katie works with older teenagers and adults aged 15 years and up and is in network with BCBS and Cigna. Katie offers virtual appointments.
Corey Romeo, MS, RD, LD (she/her)
I am a Registered Dietitian with an anti-diet, weight-inclusive approach to health. My nutrition philosophy is centered around creating a better relationship with food—one that celebrates nourishment without guilt and health without obsession. In a culture inundated with fad diets and conflicting nutritional advice, I advocate not just for balanced nutrition, but for fostering a healthy and holistic relationship with food and mind. I thoroughly enjoy engaging with clients from diverse backgrounds and hold a special passion for those dealing with issues like disordered eating, PCOS, and thyroid disorders. I work particularly well with new and experienced moms looking to find a calmness with food and body in this new chapter. It is my priority to create a safe and inclusive space where clients can openly explore their thoughts, emotions, and experiences surrounding their journey with food and self-care. I believe that all individuals are experts of their own body, which is why I work as a guide rather than a leader, uncovering what is important to my clients as well as making nutrition information straightforward and approachable.
I’ve lived in Austin for over a decade and earned a bachelor’s degree in Nutrition and Foods in 2010 and master’s degree in Human Nutrition in 2014 from Texas State University. Before joining Kimbrough Nutrition, I worked in community nutrition education, where I realized the impact of diet culture on the mindset of today’s society. I am a mom, dog-mom, and wife who enjoys reading suspense and thriller books, listening to podcasts spanning various genres, cooking new recipes, and sharing meals with family and friends.
Corey works with adults 18 and up and offers virtual and in person appointments with evening and weekend availability. She is in-network with BCBS and Cigna.

Professional Consulatation
Kathy and Katie both offer professional consultation for dietitians. Kathy loves working with newer dietitians on building relationships with clients as well as motivational interviewing. Katie specializes in working with dietitians looking to increase knowledge and skill in providing gender affirming care. Consultation pricing is based on your fee for follow up sessions.
Insurance
We currently accept Blue Cross Blue Shield, Aetna and Cigna for individual nutrition counseling. In addition, we are able to provide a superbill for all other insurance companies for you to submit directly to insurance for reimbursement. We encourage all clients to explore both in-network and out of network benefits. This is the responsibility of the client. For those looking to receive a superbill, please note there is no guarantee of reimbursement and it is the client’s responsibility to follow up with insurance. Full payment is required at the end of each session.

Art Journaling for Body Image is designed to guide you through an inspiring creative journey that will help you to discover more to your relationship with your body and self.
So often in our journey towards self and body respect, the negative voice eclipses our compassionate voice, dampening our ability to move forward. This workshop is designed to help you decipher those voices and focus on the ones that lead you towards the life you want. Through the therapeutic practice of art journaling, you'll embark on a personal exploration of self-expression, internal dialogue and body respect.

Express the Mess: Life is a beautiful, messy thing. I will guide you in visually representing the "Two Sides" within– the aspects you celebrate and the ones you wish to release.

Who am I? I'm Kathy Kimbrough, an anti-diet dietitian who has worked with individuals and groups to dismantle diet culture and find a calm relationship with food. Art journaling became such an important outlet for me personally during the pandemic and I'm really excited to share it with you. I didn’t go to art school and I didn’t consider myself a “real” artist for most of my life. I find beauty and self understanding in the messy, unintentional, imperfect medium of paint, pen and collage.
I believe art journaling, body trust and self acceptance are made for each other. If you don't like traditional journaling, if you don't think you're an artist, if you want to challenge perfectionism, this workshop is for you.
